Lemon Blossoms

I was looking on the Food Network for a recipe for rolls from Paula Dean and came across these. I remember having them from someone who made them for something, but I don't remember who or where. (If it was you, and your reading this, I need to know who you are.) We had the missionaries over (for the 2nd time this week . . . long story) I forgot to get stuff for that much needed sweet ending. But, I had all the stuff for these and decided to make them. Yummy!

18 1/2-ounce package yellow cake mix
3 1/2-ounce package instant lemon pudding mix
4 large eggs
3/4 cup vegetable oil

Glaze:

4 cups confectioners' sugar
1/3 cup fresh lemon juice
1 lemon, zested
3 tablespoons vegetable oil
3 tablespoons water

Preheat the oven to 350 degrees F.

Spray miniature muffin tins with vegetable oil cooking spray. Combine the cake mix, pudding mix, eggs and oil and blend well with an electric mixer until smooth, about 2 minutes. Pour a small amount of batter, filling each muffin tin half way. Bake for 8 minutes, or until edges are golden brown. (Just watch them, it would be so sad to lose some ) Turn out onto a tea towel.

To make the glaze, sift the sugar into a mixing bowl. Add the lemon juice, zest, oil, and 3 tablespoons water. Mix with a spoon until smooth.

With fingers, dip the cupcakes into the glaze while they're still warm, covering as much of the cake as possible, or spoon the glaze over the warm cupcakes, turning them to completely coat. Place on wire racks with waxed paper underneath to catch any drips. Let the glaze set thoroughly, about 1 hour, before storing in containers with tight-fitting lids.


Because of what I had on hand, I used a lemon cake mix instead of a yellow one. Still very good!

Steph, I think you may have had them via carissa poyfair. She recently posted about them on her blog...i made them last week and ruined my diet. Oh well. It was worth it.

Those do look DIVINE! I wish I was a missionary eating dinner at your house, because I know it'd be the best dinner EVER and I'd be super duper fatter than I am now!:) Okay, and I'll just apologize now for Rebecca being such a brat...thanks for being understanding and hopefully Riley will turn out better...although she and Rebecca do have a lot of similarities!:)

Yes, it was me. I brought them to a couple of ward things that you might have been at. Aren't they delicious?! I always eat way too much!

I don't care whose recipe it is or who made them originally. Just pack some up and send them to Utah. Play like I'm a missionary or something and I need a care package.

Hi, you don't know me. I actually came across your blog while looking for my sister's. She's a pedersen too. (same spelling) Anyway. I am a huge fan of cooking and saw the lemon cakes and stopped to take a peek. Then of course, had to keep looking and found all those yummy recipes!~ I am so excited to try some of these. These are my favorite! I got this recipe from Carissa Poyfair (well actually from food network, but I had tried hers and had to make them). I could eat the lemon glaze plain it's SO GOOD! So, how do you get your food pictures to turn out so great? Any tips?
