here's a favorite!

This has to be one of my all time favorite salad recipes. Cameron and I L.O.V.E. it! It is the perfect salad. It has some of this and some of that with a lot of YUM! I got the recipe from my friend Sarah a few years ago. Whenever we get a recipe from someone that we have welcomed into the family, the recipe is given the name of the person. So this has been named "Sarah Salad". Now, I know there is a Lion House recipe named Sarah Salad, so if you would rather have the real name, it's called Zesty Summer Salad. But in our house, we know it as Sarah Salad. So thanks Sarah for sharing all your yummy recipes!

4-6 chicken breasts teriyaki style: 1 cup honey, 1 cup soy sauce, dash of garlic; marinade overnight. Right before you make the salad, bake chicken @ 350 for 25 minutes. Cut into cubes.

{ Mix the following in a large bowl }

3 cans black beans
3 cans white corn, drained
2 cucumbers, chopped
2 avaocados, ch0pped
3 tomatoes, chopped
1 of each, red, green and yellow pepper, chopped
1 red onion, chopped
4-5 fresh limes squeezed over the top of ingredients
3 TB. rice vinegar

{ set aside }

1-2 heads of lettuce
1 bag lime tortilla chips
1 pkg HOMEMADE ranch dressing

{ how to serve }

Place chips on the bottom of plate follow with lettuce, veggies/chicken mixture, and top with ranch dressing.

**Obviously this make a TON, so invite a crowd over! You'll still have leftovers to enjoy.

This recipe sounds SO delicious. It makes me hungry and I just finished eating my lunch. I'll have to try it asap....or better yet, why don't you just invite us over next time you make it. :)

I agree, this is a favorite! I always forget about it because I think of it as a "summer" salad but yum, yum, yum- I think I'm going to have to give it a try again!

Sounds so good! I am going to give this one a whirl next Thursday. I am in charge of our "salad day" lunch I have with my mother and sister in laws. Hopefully it will turn out as pretty as yours!!
